I recently had my first lettuce harvest in my little indoor garden and was able to make a small salad. I was afraid my lettuce growing in soil was bolting so I made the decision to harvest and start anew! I’m glad I did because if lettuce bolts it can taste bitter. Luckily this was perfect!
My simple salad calls for seven ingredients:
- Lettuce
- Cherry tomatoes
- Red Onion
- Balsamic Vinegar
- Olive Oil
- Salt & Pepper
Slice your cherry tomatoes in half or quarters.
Slice your onions. (I like to use a potato peeler.)
Mix lettuce, cherry tomatoes and onions together in a bowl.
Drizzle about a teaspoon or two of the balsamic vinegar and olive oil. Obviously pour to your liking.
Finally season with a dash of salt and pepper. Season to taste.
